South African Traditional Recipe: Umqombothi (Home-brewed Beer) !!!!


Ingredients:

Boiling Water 5 liter

5x Mthombo/Mmela 2kg

Method

  • Mix boiling water with Mthombo/Mmela (making Sekhukhu)

  • Put sekhukhu or the mix in a warm place or cover it with blankets for 4 hours.

  • Pour it inside a big dish or dishes to cool down.

  • After cooling down, pour it inside a pot(Sekeke)!

  • Mix Sekhukhu with Mthombo/Mmela and water inside the pot.

  • Put it in a warm place for 1 day during summer and half a day in winter.

  • Use a big three leg African pot or a normal pot to cook the mixture and you will be making Lesheleba.

  • Pour Lesheleba inside a dish to cool down.

  • After cooling down, pour it inside Sekeke/ Calabash/ Moeta.

  • Mix Lesheleba with Mthombo/Mmela ( the process is called Oa Omela)

  • Leave the mixture for 2 days.

  • The mixture will start forming foam or having bubbles on top.

  • Surf or hlotla the foaming homebrewed beer (Umqombothi)

  • Put it inside a clean Calabash/Moeta for people to drink. Umqombothi is made for special occasions such as wedding celebrations or traditional rituals.
